Easy and Healthy Instant Pot Chicken Noodle Soup – Instapot recipe to boost immune system + protein
Hello!
This beautiful rainy fall day has motivated me to make an easy and healthy chicken noodle soup in my instant pot! Some days, I just prefer use the instant pot for efficiency and convenience. I can leave it, go do something else, and come back to to food ready for the whole family. Great for those who are busy…or just lazy!
There are so many ways to make chicken noodle. This is just one of my recipes. I always change things around and I am learning to perfect it. If you have any recommendations, leave it below! To make this HEALTHIER, I substituted chicken thighs/drum sticks for chicken breast. I do prefer the taste of thighs and drumsticks but chicken breast is a more lean option. For carbs, I did have eggs noodles and two small potatoes (per my man’s request!) but I also added some quinoa for healthier carbs, fiber, and protein. **Did you know that quinoa is a great source of protein and has all the essential amino acids (which are the building blocks for protein)**. I try to sneak it in wherever I can. Lastly, I added leeks and bok choy (to the traditional celery and carrot) to get boosted immunity from the soup, as these veggies have high vitamin C.
Ingredients I used:
Onion
Leek
Celery
Carrot
Garlic
Organic Chicken Broth
Chicken breast with bone
Lots of seasoning, especially if using part broth and part water like I did.
Quinoa
Egg Noodles
Bok Choy
Topped with
Cilantro (I really prefer dill for this)
Hemp seeds
