Ingredients:
Bread slices
Potato – 4 big (Boiled and mashed)
Onion – 1 medium (Finely chopped)
Coriander leaves – 1½ handfuls (Finely chopped)
Capsicum / Bell peppers – 1 handful (Finely chopped)
Pepper powder
Garam masala
Green chilly (Finely chopped)
Crushed coriander – ¼ tbsp (Optional)
Salt
Grated cheese – 2 handfuls
Mayonnaise – 2 tbsp (Recipe – or
Ketchup (Recipe –
Butter
Steps:
Combine mashed potato, onion, coriander leaves, capsicum, pepper powder, garam masala, green chilly, crushed coriander, salt and cheese.
Mix well with hands applying little pressure.
Add mayonnaise and mix well.
This mix can be stored in the refrigerator for a week.
Take a bread slice and spread some ketchup.
Add a couple of spoons of the prepared mix and spread it.
Close it with another slice of bread.
Heat a pan and spread some butter.
Place the sandwich on the pan and toast both sides.
Remove.
Enjoy the vegetable sandwich.
