Ragi is rich in fibre minerals and amino acids which make it a good choice for diabetics. It also has more polyphenols than the commonly used grains like rice, wheat, and corn which help control blood sugar levels.
Spinach is a superfood. It is loaded with tons of nutrients in a low-calorie package. Dark, leafy greens like spinach are important for skin, hair, and bone health. They also provide protein, iron, vitamins, and minerals.

Rice has low amounts of sodium, fat, and cholesterol, it is a great aid in reducing obesity. It’s rich in nutrients and has no significant negative impacts on a person’s health. Of course, its high-levels in fiber also help to reduce obesity.

INGREDIENTS

Ragi flour – ½ cup

Rice flour- ½ cup

Palak chopped – 2 cup

Ginger garlic green chilli paste – 1 tsp

Water – 1/3 cup

Sesame seeds – ¼ tsp

Jeera – ¼ tsp

Ajwain – ¼ tsp

Salt to taste

Method
Heat water with salt  + ginger garlic green chilli paste .
Add palak and mix well.
Cook for 5 mins
Add the sesame + jeera + ajwain + rice flour + ragi flour and mix well.
Cover and keep aside for 5 mins.
Open and mix well.
Once you are able to touch the dough , knead into a stiff dough.
NOTE –  the dough for poori should not be soft like that of chapati because it will absorb a lot of oil while frying. Also, pooris should be prepared immediately after preparing the dough. Unlike chapati the dough doesn’t need standing time.

Divide the dough into equal portions and roll into smooth balls .

Roll each ball into a big circle and using a small round biscuit cutter or any shaped cutters .
Remove the scraps and re-roll it again and cut circles and keep it aside, covered.
Heat oil in a pan .
Add a small piece of dough to the hot oil and it should fry and float on top at once; then the oil is ready.
Slide in the rolled pooris ,gently press the poori with the back of the slotted ladle and it would puff up.
Flip it over and leave it for few seconds; drain out the poori and place it on a kitchen towel to absorb excess oil.
DON’T OVER FRY THE POORIS.
Repeat the same process for the remaining
 pooris.
Serve it hot with your favourite side dish or dip.
