These low-fat onion rings are crispy and delicious without all the oil and mess of deep frying.

AIR FRYER ONION RINGS RECIPE

Ingredients:
FOR ONION RINGS:
1 large onion
1/2 cup ground oats or oat flour (50g)
1 tbsp tapioca starch
1/2 tsp each: salt, garlic powder, onion powder and cayenne pepper
1 egg
1/4 cup milk (60ml)
1/4 cup plain yogurt (60ml)
1 cup unsweetened cornflakes (75g)
1/4 cup grated parmesan cheese (20g)
OR second option:
1/2 cup sesame seeds (75g)
1/4 cup nutritional yeast (15g)
*1-2 tbsp olive oil for brushing (optional)°
FOR TARTAR SAUCE:
1 cup Greek yogurt (230g)
1/4 cup grated pickles (50g)
1 tsp mustard
1 tsp maple syrup
1 tsp anchovies or capers
pinch of salt and black pepper

NUTRITIONAL INFO (per serving):
131 calories, fat 3.5g, carb 18.5g, protein 6.7g

Preparation:

Peel and cut onion in thick slices, about 1/3 inch or 1 cm thick and soak in the water until you prepare other ingredients.

In first bowl add oat flour, tapioca starch, salt, garlic powder, onion powder and cayenne pepper, mix to combine.

In second bowl add egg, milk and yogurt, and whisk to combine.

In third bowl, add crushed unsweetened cornflakes and grated parmesan cheese (or second option: sesame seeds and nutritional yeast), and mix to combine.

Dredge onion rings into the oat mixture, shake off the excess.

Dip each onion into the egg mixture and then coat it in the cornflake parmesan mixture until completely covered.

Place in a single layer in your air-fryer and air-fry for 10 minutes at 400F (200C).

After 5 minutes brush with some olive oil and continue air-frying.

Serve with Greek yogurt tartar or your favorite dipping sauce.
