How to make Sourdough Rye Bread. In this video I will guide you through the whole process of making original Estonian rye sourdough bread according to the traditional recipe of my family.
Recipe notes for 2 sourdough rye breads:
Day one: mix the sourdough starter with 1 l of water and 500g of rye flour. Leave it overnight under a towel.
Day 2:
– take out new starter for the next bread
– mix in 1 tsp of salt, 2-3 tsp of sugar, seeds and 500g of rye flour.
– put it into the bread forms.
– let it rise for 3-6 h
– preheat the oven
– bake at 230 C for 15 min
– turn down the heat and bake at 180 C for 45-50 min
– take breads out of oven and wrap into towels and let them cool down slowly.
