Pineapple Chicken stir-fry with bell peppers Full recipe
Ingredients:
• 1/4 cup soy sauce
• 1/4 cup pineapple juice
• 1 tbsp of brown sugar
• 1 teaspoon of paprika
• 2 cloves garlic, minced
• 1 tablespoon of minced ginger
• 1 tablespoon sesame oil
• 2 boneless, chicken thighs
• 1 red bell pepper (or any vegetable that you prefer)
• 1 cup of Pineapple chunks
Preparation:
1. Minced garlic and ginger.
2. Combine soy sauce, paprika, pineapple juice, brown sugar, sesame oil and chicken. Let it marinade. (Let it marinade overnight if you have time)
3. Cut pineapple and bell peppers into smaller chunks.
Cooking:
1. Add sesame oil to a pan. Add garlic and bell pepper and stir fry for 3 minutes.
2. Add the marinaded chicken. Brown the chicken on both sides first.
3. Add the rest of the marinade, then let it simmer until the sauce thicken.
