RECIPES:
Banana bread muffins:
1/4 cup unsalted butter or coconut oil
1/4 cup raw sugar or coconut sugar
1 egg
2-3 ripe bananas, mashed
1/3 cup milk of choice
1 cup flour of choice (I used a GF blend)
3/4 cup oats
1 tsp baking soda
Optional: 2-3 tbsp chocolate chips
Bake at 180 degrees celsius for 30 minutes or until golden and cooked through.
Pizza Scrolls:
220g warm water
1 tsp raw sugar
2 tsp instant dried yeast
400g flour of choice
Drizzle of extra virgin olive oil (around 15g)
Pinch salt
Combine water, sugar and yeast and sit for 5 mins. Add remaining ingredients. Knead until a dough is formed. Allow to sit, covered, for 1 hour. Roll into two even rectangles and spread with pizza sauce and cheese. Roll and slice. Bake at 180 degrees celsius for 15 mins.
