This recipe is low cal and perfect as a side paired with a protein. Drizzle your favorite sauce on top. I used hot @bellyshotsauce sauce Mango Habanero for an extra kick. You could also use sweet and sour sauce made by Maggie.
You can also use this salad instead of rice or noodles. Add your favorite spaghetti sauce or curry on top. Enjoy it as a hearty meal.
Ingredients used
2 cups cooked Quinoa
1/2 cup tomatoes
1/2 cup cucumbers
1/2 cup chopped red pepper
1/2 cup shredded carrots
1/2 cup chopped spinach
Mix everything in a large bowl. Keep it in the fridge for up to 5 days.
