Hi friends, Today I’m sharing, What I eat in a day for fat loss and Weight maintenance on a starch solution (High carb low fat lifestyle). I hope you’ll give some of these recipes a try and let me know in the comments if you love Tofu and which recipes were your favorite.

1:18 Breakfast – carrots with Bulgur
2:58 Lunch – Crispy corn tortilla chips with Beans/Mango salad
3:12 Dinner – Ginger Tofu stir fry

Breakfast:
(Bulgur/Carrots porridge)
1/2 cup dry bulgur or use 1/2 cup steel cut oats
3 medium size carrots shredded (feel free to put less, I like lots of carrots!)
3 cups water
1 cardamom
1 tsp cinnamon
1/2 cup plant milk of your choice (I used unsweetened soy)
1 scoop of protein powder (optional)
Stevia to sweeten or use maple syrup
1 tbsp ground flax seeds (optional)

Cook everything on a low/medium heat for 20 minutes and serve with fresh or frozen berries and 1 tbsp of ground flax seeds. This breakfast will keep you full for hours!

Lunch:
Mango/Bean salsa with 2 air fried corn tortilla chips

Dinner: Ginger/Miso Tofu stir fry

-1 block of extra firm tofu (pressed)
-2 cups of frozen or fresh brocoli
-2.5 cups of cremini or white mushrooms
-1 large bell pepper
-3 carrots
-1 medium size onion
-1/3 cup green onions
-2 tsp toasted sesame seeds (optional)

For Tofu Marinate:
1.5 tbsp low sodium Tamari
1 tsp maple syrup
sriracha per taste
1 tsp grated ginger
1 tsp white miso paste
1 tsp rice vinegar
1.5 tbsp corn starch
Let Tofu marinate for 1/2 hour to an hour and Air fry at 400 F for 10 minutes.

For Veggies:
2 tbsp low sodium Tamari
2 tsp maple syrup
sriracha per taste
1-1.5 tsp grated ginger
1.5 tsp white miso paste
2 tsp rice vinegar
2 tbsp corn starch
1/4 cup water (+/-)
(Add everything and mix in a bowl, keep aside)

Instructions:
Chop all your veggies and keep aside. On a large skillet, brown onion on a low/medium heat for about 5 minutes, add mushrooms and cook for about 7 minutes till mushrooms release water and start to caramelize. Add all chopped veggies and cook for about 5-7 minutes. After 7 minutes, pour the sauce over veggies, add air fried tofu and cook for additional 5 minutes till sauce starts to thicken. Turn off the heat, add green onions and toasted sesame seeds and serve with rice of your choice.
