Mediterranean food is my absolute favourite, especially the MEZZE PLATTER. So, whenever I get a chance I try and make something or other at home.
This time I added a healthy twist to my falafels and they turned out to be epic. Try these easy ZUCCHINI FALAFELS and let me know if you liked it @THE SPICY STORY

Ingredients –
1-1/2 cup Chickpeas, soaked overnight
1/2 cup Zucchini, grated (remove excess water)
1 medium Onion, chopped
1/4 cup Coriander leaves
4-6 Garlic cloves
2 tbsp Gram flour
1 tsp Sesame seeds
1 tsp Red chilli powder
1/2 tsp Black pepper
1 tsp Cumin powder
Salt, to taste
1 tsp Coriander powder
1 tbsp Lemon juice
1/2 tsp Baking powder
Oil, as required

Instructions –
Add all the ingredients in a food processor or mixer jar except oil and grind it to a slightly coarse paste. Add the paste in a big bowl and freeze it for about 30 minutes.
Shape into small balls and then flatten them to make a Tikki like shape. Heat oil in a flat pan and pan fry it from both the sides. You can also deep fry for a crispier falafel. Serve with pita bread, hummus and lavash vegetable salad.
