I originally stated that the recipe provides 6 portions but after baking I divided it into 7 reasonable portions so it’s actually cheaper than 64p per portion!

Makes: 6/ Cost:£0.64 per portion/ Cook Time: 1H10/ Freezable
6 ripe bananas mashed (£0.78)
250g Self raising flour (£0.45)
Trail mix (£1.19)
150ml yogurt (£0.69)
2 eggs (£0.75)

Cupboard:
1 tsp Baking soda
1 tsp Vanilla extract
1 tsp cinnamon

Method:

1. Start by preheating your oven to 180°C. Grease your loaf tin with coconut oil and line with parchment paper
2. Combine in a mixing bowl your dry ingredients (flour, baking soda & cinnamon)
3. In a separate bowl, mash your ripe bananas with a fork and whisk in the eggs, yogurt and vanilla extract.
4. While mixing, fold your dry ingredients into your wet and finally stir in the trail mix.
5. Once combined, pour into your loaf tin and pop in the oven for 1H or until the sewer comes out clean.
6. Chop up so it’s ready to eat at breakfast time, you can serve with a dollop of yogurt and a squeeze of honey.
