🥗Mediterranean Quinoa Salad🥗
This healthy Mediterranean quinoa salad with feta makes for a simple lunch or dinner, thanks to pantry staples like chickpeas, olives, and is a light but filling vegetarian meal. 🍽 While totally vegetarian and super light, this salad is surprisingly hearty and filling, thanks to protein-packed quinoa and chickpeas, but if you’re craving even more protein, you could always throw in some grilled Paneer or Tofu, just like I did. ❤️
Salad Dressing:
🥗Honey Mustard Dressing- 1/2 Cup
🥗Vinegar- 2 Tbsp
🥗Lemon Juice- 2 Tbsp
🥗Parsley- 2 tbsp
🥗Oregano- 1 tsp
🥗Garlic- 3 clove grated
🥗Salt- 1 tsp
🥗Pepper- 1 tsp
🥗Red chilli flakes- 1 Tsp
🥗Parmesan cheese- 2 tbsp
Others:
🥗Cooked quinoa- 3 Cups
🥗Sundried tomatoes- 1/2 Cup
🥗Cherry tomatoes- 1/2 cup
🥗Arugula- 2 cups
🥗Persian cucumber- 1 cup
🥗Basil- 1/2 cup
🥗Mint- 1/2 cup
🥗Feta cheese- 3/4 cup
🥗Sliced olives- 3/4 cup
🥗Red onion- 1
🥗Roasted Chickpeas- 1/3 cup
✅ I’ve used store-bought Honey Mustard Dressing. If you want to make it at home, add 2 Tbsp Honey and 3 Tbsp Mustard to 1/4 Cup of Olive Oil.
