Chickpeas are so versatile, and if you’ve never made a chickpea “chicken” salad, you are missing out!

Today I made myself a buffalo chickpea salad sandwich with tomatoes and microgreens.

To make the chickpea salad, I started off with a can of chickpeas and added onion, celery, dijon mustard, mayo, garlic powder, salt, pepper, and primal kitchen buffalo sauce and mixed until combined.

To go with this, I added baked snap peas and protein balls for dessert.
