Methi Chapatis are simple flat breads / Chapatis with “Methi leaves” (Fenugreek leaves/ “uluva” ela). These are healthy, flavourful and delicious. Addition of methi leaves makes them Iron rich and nutritious compared to regular chapatis. I make these without adding any spices, for the “South Indian” in me loves veggies,rotis and salads without much masala.I make these like regular Chapatis, just that I add methi leaves and use hot water to make the dough, to get softer Chapatis and it also helps to tame the bitterness of the fenugreek leaves is what I believe.They are so good when hot ,that you actually don’t need any curry to go with.
Here is the recipe if you wish to try:
1 small bunch of methi ( choose the younger plants)3 Cups whole wheat flour /Atta1 tsp salt1tbsp oil1 cup (approx) Hot water
Instructions:
Wash and clean the methi leaves. Use the tender stalks too. Chop them roughly into small pieces.
To it, Add the flour, salt and oil. Mix them well. Now add hot water in batches and roll them into a smooth dough. Let it rest for sometime, at least 30 minutes.
Take small circles and roll them into Chapatis and fry them on a hot Tawa on both sides.
Spread little Ghee on top, And enjoy hot with any curry or pickle .
