Beans salad is a delicious, easy and nutritious salad that is high in protein and perfect for a light dinner or lunch. Ingredients are very flexible and you can adjust to your preference.
Ingredients:
• 1 cup kidney beans
• 1/3 cup chopped celery
• 1 small chopped red onion
• 1/3 cup chopped tomatoes
• 1/3 cup chopped sweet peppers
• chopped fresh basil
• 1/3 cup chopped green onion
• 2 tbsp fresh lemon juice
• 3 tbsp extra virgin olive oil
• 1 tbsp feta cheese (optional)
• 1 tsp powdered paprika
• 1 tsp dried or fresh mint
• salt and black pepper
Directions:
• In a mixing bowl, combine all the veggies except avocado together.
• Add olive oil, lemon juice, salt and pepper and mix well.
• Top the salad with avocado pieces, drizzle of olive oil, dried mint and paprika powder. Crumple on some feta cheese and serve. Enjoy!
