Looking for some low calorie meals after the holiday? In today’s video I’ll be sharing 4 low calorie meals that are filling and each one is under 600 calories per serving!

Chipotle Chicken Burrito Bowls

Ingredients

1 1/2 pounds diced chicken breast
1 lime; juiced
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cumin
1/2 tsp smoked paprika
1/2 cup low fat greek yogurt
3 tsp chipotle sauce

Pico De Gallo:
2 tomatoes; diced
1 jalepeno; diced
1 small red onion; diced
3 Tbsp cilantro; chopped
2 limes; juiced
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp pepper

Directions
In a large bowl season the diced chicken with garlic powder, onion powder, cumin, paprika, and salt and pepper to taste. Mix well and set aside.
Mix together the chipotle sauce and the yogurt.
To a hot pan over medium high heat, cook the chicken for about 4 minutes per side or until cooked through.
In another medium sized bowl mix together all the ingredients for the pico de gallo
Serve over rice and your favorite burrito bowl toppings. (We stuck with all low calorie toppings!)

Chicken Alfredo

Ingredients
—2 large chicken breasts; sliced thin into 4 pieces
-1 Tbsp garlic and herb seasoning
-8oz low fat cottage cheese
-2 laughing cow wedges; light
-1/4 cup milk
-1/4 cup mozzarella; shredded
-8oz brown rice pasta

Directions
Boil pasta according to package directions.
Season chicken with garlic herb seasoning and cook in skillet over medium high heat 4-5 minutes per side or until cooked through; remove from skillet and keep warm
In a blender add the cottage cheese, laughing cow wedges, mozzarella cheese, and milk. Blend until smooth.
To the same pan you cooked the chicken in add blended mixture and cook until melted. About 4 minutes.
Toss the cooked pasta with sauce and top with sliced chicken. Enjoy!

Teriyaki Beef

Ingredients
1 pound beef steak; cut into strips
2 bell peppers; sliced
1 small yellow onion; diced
4 cloves garlic; minced
1/2 cup soy sauce
1 cup tomato sauce
1/2 cup barbecue sauce
2 Tbsp rice wine vinegar
3 Tbsp Sesame oil; seperated
Green onion for garnish

Directions
In a small mixing bowl combine garlic, tomato sauce, soy sauce, barbecue sauce, vinegar, and 1 Tbsp sesame oil
To a large skillet heat 1 Tbsp sesame oil; cook beef 3 minutes; remove and set aside
To the same pan drizzle in remaining sesame oil and saute onions and peppers for 5 minutes
Add in the sauce and bring to a simmer, return beef to pan and heat through (about 2 minutes more)
Serve over rice and garnish with green onions. Enjoy!

Sticky Orange Chicken

Ingredients

1 1/2 pounds diced chicken breast
1 tsp each garlic powder and smoked paprika
1/2 tsp black pepper
1/2 tsp salt
3/4 cup orange juice (low sugar)
2 Tbsp soy sauce
2 tsp grated garlic
2 tsp grated ginger
1 Tbsp apple cider vinegar
1/4 cup brown sugar
1 tsp corn starch

Directions
Pre heat oven to 400F
Season chicken with garlic powder, salt, pepper, and smoked paprika spread out on a baking sheet
Bake chicken in pre heated oven for 23 minutes
To a pan over low heat add in the orange juice, soy sauce, vinegar, garlic, ginger, and brown sugar, bring to a simmer
Stir in the corn starch and simmer until thickened; about a minute or 2
Add chicken to sauce and toss until well coated
Serve with rice and your favorie veggie and enjoy!
