Healthy Double Chocolate Marshmallow Cookies 🍪 (vegan & gluten-free.)
These healthy double chocolate marshmallow cookies are gooey, chewy, soft, and ridiculously delicious. They are vegan, gluten-free, and made with better-for-you ingredients.

Ingredients:
⏺️ 1 Tbsp @bobsredmill organic flaxseed meal.
⏺️ 3 Tbsp filtered water.
⏺️ 1 cup @artisanaorganics raw pecan butter.
⏺️ 1/2 tsp @simplyorganicfoods Madagascar vanilla extract.
⏺️ 1/4 tsp Himalayan pink salt.
⏺️ 1/2 cup @bigtreefarmsbali coconut sugar.
⏺️ 1/2 tsp baking soda.
⏺️ 1/ cup @navitasorganics cacao powder.
⏺️ 3 Tbsp @bobsredmill almond flour.
⏺️ 1/2 cup @wholefoods organic semi-sweet chocolate chips.
⏺️ 3/4 cup mini Vegan marshmallows or cut large marshmallows into mini marshmallows.
⏺️ Organic candy canes, crushed (optional.)
Let’s Bake 👩🍳:
1️⃣ In a large mixing bowl add flax seed meal and water. Stir & let it sit for 5 minutes.
2️⃣ Next, add pecan butter, vanilla extract, salt, coconut sugar, and baking soda. Mix until well combined.
3️⃣ Add the cacao powder and almond flour. Mix until well combined.
4️⃣ Fold in chocolate.
5️⃣ Chill dough for 30 minutes.
6️⃣ While the dough is in the fridge preheat the oven to 350 F.
7️⃣ Using a small cookie scoop, scoop the dough, press down in the center, and insert 3-4 marshmallows into the middle of the cookies. Place on a parchment-lined baking sheet. Flatten with your hand and insert more chocolate on top.
8️⃣ Bake for 10-12 minutes.
9️⃣Remove the cookies from the oven and allow them to cool.
🔟 Top the cookies with crushed candy canes. Enjoy 😉
