Ingredients:
3 Bananas
2 Eggs
2 Cups Almond Flour (Other other flour- but I can’t promise consistency will be as moist and wonderful)
1 tsp Baking soda
1 tsp Cinnamon (Or to taste- I go a lil crazy on it because I’m LOVIN it)
1 cup Granulated sugar (I use Monkfruit as a substitute, but sugar-free substitute I’ve ever found)
1/2 tsp Salt (Don’t add salt if your butter is salted)
1 tsp Vanilla extract
1 Stick Butter (I use Kerri-gold because it’s grass-fed)
Your favorite nuts if you love a crunch (I prefer Macadamia Nuts)
Recipe/Directions
-Preheat oven to 350 degrees.
-Cover pan with butter or cooking spray.
-Add the stick of butter to a large bowl and microwave for 1 minute, or until melted.
-Add the bananas to the same bowl and mash with a fork.
-Add the vanilla extract and egg to the bowl and use the same fork to mash and stir until no yellow streaks of egg remain.
-In a second large bowl whisk together the almond flour, sugar, baking soda, salt, and cinnamon.
-Add the dry ingredients to the wet ingredients and mix together with a spatula just until combined.
-Pour the batter into prepared loaf pan and bake for 45-55 minutes until a toothpick inserted in the center of the bread comes out clean. Add your favorite nuts if you so wish (I love adding Macadamia Nuts for added crunch & decoration the loaf by taking it out of the oven halfway through baking and adding sliced bananas and cinnamon on top!)
