Rajma Vegetable Salad
1 cup soaked and cooked rajma (kidney beans)
1 cup coloured capsicum cubes
1 cup baby spinach , torn into pieces
1 cup rocket leaves (arugula) , torn into pieces
½ cup carrot juliennes
½ cup chopped spring onion greens
8 cherry tomatoes , cut into halves
4 tbsp alfalfa sprouts
To Be Mixed Into A Dressing
2 tbsp extra virgin olive oil
1 tsp dry red chilli flakes (paprika)
½ tsp dried oregano
salt to taste
1. To make rajma vegetable salad, combine all the ingredients in a lunch box and mix well. Carry the dressing in a separate small container.
2. Just before serving, add the dressing and toss well. Serve the rajma vegetable salad immediately.
