Thanksgiving Spinach Artichoke Cups
Recipe makes 20-30
Serving Size 5 Cups: 277 Calories | p7/f7/c24

Ingredients:
15-30 mini phyllo shells – thawed1 cup thawed, drained & chopped frozen spinach
6.5oz can artichoke hearts, drained and chopped
2 Tbsp Vegan Mayo
5 Tbsp + 1 tsp vegan cream cheese – room temp
5 Tbsp + 1 tsp Panko breadcrumbs
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1/2-1 tsp red pepper flakes
1.5 Tbsp Nutritional Yeast
Juice from 1/2 Lemon
1/2 tsp salt + fresh cracked pepper

Directions:Preheat oven to 375
Mix all ingredients in a bowl.
Taste mixture to adjust seasoning if needed.
Line a baking sheet with foil, place phyllo shells on top and spoon filling inside shells.
Top with a little fresh cracked pepper
Bake for 10-12 minutes
Let cool & enjoy!

This mixture is perfect to make ahead and store in the fridge until you’re ready to go to your thanksgiving dinner! Assemble at home & bake or bring assembled cups to dinner and make in the oven there! OR you can completely assemble ahead of time, freeze them and bake from frozen adding an additional ~10 minutes to the baking time!
