HEALTHY BROCCOLI SOUP RECIPE:
Ingredients:
15g of Butter
15g of olive oil
1 medium-sized broccoli
Half a medium-sized onion
2-3 cloves of garlic
1 carrot
1-2 stalks of parsley
2 cups of chicken broth and 1 cup of water
Salt and pepper
Preparation:
1. Minced the garlic and onions.
2. Cut the broccoli and carrot into bite-sized pieces.
Cooking:
1. Add butter and olive oil.
2. After the butter melted, sauteed the garlic, onions and parsley.
3. Add carrots and fry for 3-4 mins under medium heat. Add broccoli and fry for 5mins.
4. Add chicken broth and water.
5. Under high heat, bring to a boil. Simmer under med heat for 10mins, till the broccoli and carrots become soft. (use a fork to test)
6. Using a blender, blend the soup into a puree.
7. Add some pepper and salt (to taste) and enjoy!
8. Optional: melt in some cheddar cheese for a deeper flavour.
