Ingredients:
1 cup poha (flattened rice)
1 small onion, finely chopped
1 small potato, peeled and diced
1/4 cup frozen peas
1/4 cup roasted groundnuts, crushed
2 green chilies, finely chopped
1/2 tsp mustard seeds
1/2 tsp cumin seeds
A pinch of asafoetida (hing)
1 tbsp oil
Salt to taste
Chopped cilantro leaves for garnish
Lemon wedges for serving
Instructions:
Rinse the poha in cold water for 2-3 times and then drain the water completely. Keep aside.
Heat oil in a pan and add mustard seeds, cumin seeds and asafoetida. Let them splutter.
Add onions and green chilies and saute until onions turn translucent.
Add diced potatoes and cook for 3-4 minutes until they are slightly tender.
Add frozen peas and cook for 1-2 minutes until they are cooked through.
Add the drained poha, salt and crushed groundnuts. Mix well and cook for 2-3 minutes until the poha is heated through.
Garnish with chopped cilantro leaves and serve hot with lemon wedges.
