400g of skinless salmon

INGREDIENTS: (for 4 servings)
2 large leeks
1 large courgette
1 clove garlic
Spring fresh thyme
500g gnocchi
1 tsp mustard
350ml chicken stock
200g half fat creme fraiche
1 heaped tbsp flour
Parmesan cheese
1. Preheat the oven to 200c fan
2. Slice the leeks into rounds. Core the courgette and cut into small dice. Mince the garlic
3. Sweat the leeks, courgette and garlic in 1 tbsp olive oil with a pinch of salt and fresh thyme for 10 minutes.
4. Sprinkle in the flour and mix for 2-3 minutes. Pour 350 ml chicken stock, season with black pepper and simmer for 10 min to thicken. Stir in the creme fraiche, mustard and gnocchi, simmer for a minute or so then tip into a baking dish.
5. Cover with lots of grated Parmesan and bake for 15 min until the top is golden and delicious. Leave to rest 10 min before serving.
