So yummy!! You’ll love this roasted sweet and salty salad!

Kale, squash, prosciutto salad
1 bunch kale, cleaned, de-stemmed and roughly chopped
2 cups cubed butternut squash (I used the pre chopped squash in the bag for convenience!)
6 ounces sliced prosciutto
2 tablespoons olive oil, divided
Shaved Parmesan cheese
Balsamic vinegar glaze

Preheat oven to 425°F
Toss butternut squash in 1 tbsp oil and season with salt and pepper. Roast on a sheet pan for 20 minutes.
Meanwhile toss the kale in the remaining oil and season. Roast with the squash for 10 more minutes.
On a large platter add the kale, then sprinkle the butternut squash over it. Add pieces of prosciutto and shaved strips of parmesan cheese. Drizzle with balsamic vinegar glaze. Serve warm.
