Hey everyone! Thanks for stopping by for another delicious recipe. This HEALTHY red lentil salad comes together in 30 minutes. At the time I made this recipe, I only had red lentils around so that is why they are featured. This recipe works splendidly with yellow split peas or brown / green lentils. Cheers!
Ingredients:
2 – 3 cups cooked red lentils
8 -10 mandarins
water or veggie broth to thin, approximately 1/2 cup
2 tbsp curry powder
2 tsps black pepper
1 tbsp white miso paste
1 tsp ground cardamom (optional)
2 tbsp white vinegar (optional, but recommended, also sub lemon juice if this is easier!)
Serve with your favorite salad mix and crunch veggies such as cucumber, red bell pepper, red onion, and maybe even some nice fresh avocado slices! Enjoy!!
