To use up your salad vegetables before you go shopping, make this salad in as bigger quantity as you want. Then refill your fridge with fresh new vegetables, taking note of any vegetables you didn’t use. We soon learn only to buy those for specific recipes. You can throw in some stir fried marinated tofu or chicken as well. Let’s get chopping…….
Ingredients : Any or all of the following
Pineapple cut into pieces
Orange segments chopped
Baby spinach leaves
Romaine lettuce
Tomatoes any variety chopped
Beetroot preferably fresh cooked and picked
Capsicum any colour finely chopped
Olives any colour pitted and halved
Capers drained
Cucumber peeled and matchsticked
Carrot very finely grated
Orange or Lime zest
Spring onions diced
Mint or parsley or both chopped
Mung bean sprouts
For the dressing:
1 heaped tsp honey melted (the best quality you can manage)
1 teaspoon of American mustard
2 teaspoons red wine vinegar
