Chicken:
the chicken I purchased is from Costco, I looove the Kirkland brand…it’s kind of the best, no?

I seasoned the chicken breast with xtra virgin olive oil, basil, sea salt, ground pepper, and lemon juice (keep the lemon grind on top of the chicken while cooking for intense & yummy flavor!).

I sliced the chicken into thin pieces so it was easier to cook.
Cook @ 400 degrees for 20 mins.

For the sweet potatoes I just washed, wrapped in foil, and put in the oven on 400 degrees for 1 hour.

I leave the potatoes on the bottom rack and the chicken on the top together & it comes out perfect.

When the potatoes are soft / finished, I put butter and pepper on top for more flavor….mouth watering yet?

Now for the SALAD.

I get so bored with regular old salad so I wanted to switch it up a bit.

I sliced cherry tomatoes (a whole container full) & 1/4 onion and satuée in a little olive oil for about 5 mins (you can even use PAM spray).
After that is cooked take it out and place in a bowl and start to satuée some spinach– be careful & only cook for about 1 min, turning occasionally so you aren’t cooking out all the nutrients!!

Mix all salad ingredients with fresh sliced cucumber, pinch of basil, pinch of pepper, pinch of salt, tbsp of liquid aminos & tbsp of balsamic vinegerette! VOILA.

Easy, Nutritious, && DEEEELICIOUS!
