Sprouted Brown Chana Salad

Ingredients

Brown chana sprouts -1 cup
Chopped onion -1/4 cup
Chopped cucumber -1/4 cup
Chopped tomato -1/4 cup
Chopped raw mango -1 tbsp
Chopped carrot -1/4 cup
Chopped green chillies -1 tsp
Fresh coriander leaves – a handful
Crushed peanuts-1 tbsp

Salad Dressing

Ingredients

Olive oil -1 tbsp
Lemon juice -1 tbsp
Honey-1 tbsp
Salt to taste
Mint leaves -4 (torn)
Chopped garlic -2 tbsp

Method

Soak brown chana in water overnight.Strain and steam it for 7-8 min till soft.

In a bottle,add all ingredients of Salad Dressing and shake well.

In a bowl,add steamed brown chana, chopped onion, tomato,carrot, cucumber,mango pieces,fresh coriander leaves, crushed peanuts,green chillies and the salad dressing.Mix all ingredients well.

Garnish with crushed peanuts and fresh coriander leaves.
