Spicy cabbage soup recipe for weight loss

Ingredients:

– 1 tablespoon of oil
– 1 onion, chopped
– 4 cloves of garlic, minced
– 1 carrot, peeled and diced
– 2 celery stalks, sliced
– 4 cups of chicken broth (or vegetable broth for vegan option)
– 2 tablespoons of tomato paste
– 1 teaspoon of salt
– 1/2 teaspoon of black pepper
– 1/4 teaspoon of red pepper flakes (or more if you like it spicy)
– 1/4 teaspoon of dried oregano
– 1/4 teaspoon of dried thyme
– 4 cups of chopped cabbage
– 2 cups of cooked chicken, sausage, or tofu (cut into bite-sized pieces)
– Fresh parsley for garnish (optional)

Instructions:

– Heat oil in a large pot over medium-high heat. Add onion and garlic and cook for about 10 minutes, stirring occasionally, until soft and golden.
– Add carrot and celery and cook for another 5 minutes, stirring occasionally.
– Add chicken broth, tomato paste, salt, pepper, red pepper flakes, oregano, and thyme and bring to a boil. Reduce heat and simmer for about 15 minutes.
