Ingredients
1/2 white onion, dice
1/2 red pepper, diced
1/2 small zucchini, shredded
1 cup spinach, finely chopped
3/4 cup parmesan cheese, grated
6 eggs
1/2 tsp each of salt and pepper
2 minced garlic cloves
1 tbsp olive oil

Directions (9 servings)
Heat oil in a pan at medium high heat
Add onion, garlic and cook for 3 minutes
Add peppers, zucchini and cook 3 more minutes
Spray muffin tray with cooking spray
Fill tray 3/4 of the way with onion and pepper mix
Heat oven to 375 degrees
In a large bowl, beat 6 eggs
Add spinach, parmesan cheese, salt and pepper
Fill muffin tray cups the rest of the way with egg mixture, leaving room at the top
Be careful not to overfill!

Cook for 18 to 22 minutes and let cool for 5 to 10 minutes before serving. Try serving with hot sauce!
