Today I will be sharing with you a quick and easy oil free Gallo pinto recipe that I ate for breakfast everyday in Costa Rica. This Gallo pinto recipe is full of fiber and lots of flavor. I will also be sharing some of my trip of this beautiful country. The full recipe is below as are all the links to things I talked about in the video.
EASY OIL FREE GALLO PINTO
1 CAN 15 OUNCE BLACK BEANS RINSED AND DRAINED
2 CUPS COLD COOKED RICE
1 TSP MINCED GARLIC
1 CUP CHOPPED ONION
1/2 CUP DICED TOMATO
1 CUP RED BELL PEPPER CHOPPED
2-3 T LIZANO SAUCE
1/4 CUP CHOPPED CILANTRO OR FLAT LEAF PARSLEY
IN A NON STICK SKILLET ADD 3 T WATER ON MEDIUM HIGH HEAT ADD THE ONION AND COOK FOR 2-3 MINUTES, THEN ADD THE PEPPERS AND COOK FOR 2-3 MINUTES, THEN ADD THE TOMATO AND COOK FOR 1 MINUTE, THEN ADD CILANTRO AND GARLIC AND 2 T OF LIZANO SAUCE AND COOK FOR 2-3 MINUTES, TURN THE HEAT DOWN TO MEDIUM ADD THE BEANS AND THE RICE, MIX WELL BREAKING DOWN ANY BIG CLUMPS OF RICE AND LET IT HEAT THROUGH. ADD WATER AS NEEDED ANY TIME DURING THE COOKING PROCESS. YOU CAN TOP YOUR PLATE WITH MORE LIZANO SAUCE AND CILANTRO.
