I find that going to multiple grocery stores is a hassle, so instead, I created 3 easy and healthy sheet pan dinner/meal prep recipes using ingredients ALL from Trader Joe’s. Who doesn’t love Trader Joe’s? It’s convenient and time saving. Each recipe requires 1 sheet pan (baking pan), parchment paper or a silicon mat and 25 minutes to cook. SO EASY. Gluten-free and vegan. These sheet pan dinner recipes will set you up for a week’s success!

Portabello Fajitas
1 green bell pepper
1 orange bell pepper
1 small red onion
4 portabello mushrooms (clean with damp towel) – 2 packs
seasoning for veggies – 3-4 tbsp olive oil, 1 tsp salt, 1/4 tsp black pepper, 1/2 tsp cumin, 1/2 tsp paprika
lime as garnish
1 can garbanzo beans (rinsed) – 1/4 tsp cumin, 1/4 tsp paprika, 1/4 tsp salt, 1/8 tsp black pepper, 1 tbsp olive oil, half lime freshly squeezed
sliced jalapeño as garnish
guac as garnish
cilantro as garnish
Mix together in bowl, veggies and garbanzo beans separately. Spread out on lined baking sheet. Bake at 450 degrees for 20-25 minutes until tender. For extra crispy, broil for 2-3 minutes. Heat up corn tortillas straight on stove top or in pan.
Curry Roasted Roasted Sweet Potatoes and Tempeh
1 pack tempeh (or tofu)
– 4-5 tbsp coconut aminos or tamari
– 1 tsp onion powder
– 1/2 tsp salt
1 large sweet potato, cubed
– 2-3 tbsp olive oil
– 1 tsp salt
– 1/4 tsp pepper
– 1 tsp onion powder
– 1 tsp curry powder (or turmeric and cumin)
Broccoli florets (olive oil and onion salt)
Cut the tempeh and sweet potato the same size to cook evenly. Spread the veggies and protein out on a lined baking sheet and bake at 400 degrees F. for 20-25 min until crispy. Bake at the top rack of oven.
Edamame Veggie Rice Bowl
– 1/2 pack cooked edamame
– 2 tbsp coconut aminos or tamari
– 1 tsp crunchy chili onion oil
1/2 Purple Cabbage, cubed (I have a back2basics video on how to cut a cabbage)
– 2-3 tbsp olive oil
– 1 tsp onion salt
– 1/2 tsp onion powder
Cauliflower florets (olive oil and onion salt)
Frozen colorful carrots (you can find in frozen section)
Roasted red pepper, use 1 and dice
1 packet frozen organic Jasmine brown or white rice (super convenient and no extra nonsense ingredients, just microwave for 3 min)
Spread the veggies and protein out on a lined baking sheet and bake at 400 degrees F. for 20-25 min until veggies are tender. Pair with rice and garnish with green onion.
