Prepare this watermelon pizza in just 5 minutes for a healthy breakfast, snack, or dessert. It’s topped with Greek yogurt, lemon zest, berries, granola, and honey, making a sweet, tangy, and crunchy treat for summertime! It is low carb, low-calorie, gluten-free, and vegetarian!
Watermelon Pizza Recipe:
Ingredients:
1 round slice of seedless watermelon cut into 2-3 inches thick (make sure to buy ripe, sweet watermelon)
8 tbsp plain Greek yogurt or other thick yogurt of your choice
Fresh lime zest or lemon zest
1/3 cup fresh berries (I used strawberries and blueberries, but you can also use raspberries and blackberries)
1-2 tsp chia seeds
3-4 tbsp granola (your favorite homemade or store-bought)
1 tbsp honey or maple syrup or agave syrup
Fresh mint leaves to garnish
How to make pizza:
1. CUT: Using a sharp Chef’s knife, cut a ripe watermelon in half. Then, cut a round slice right down the middle, about 2-3 inches thick. Next, cut that round slice into 8 wedges (as if slicing a pizza).
2. ASSEMBLE: Top each wedge with a tablespoon of Greek yogurt and lemon zest. Garnish them with berries, chia, and granola. Drizzle with honey, garnish with mint leaves, and enjoy!
NOTE: If you prefer, you can spread the yogurt over the wedges instead of simply spooning it on top of each wedge.
