TACO POTATOES – Serves 6
(6) potatoes (mine were about 160 grams each)
1 lb extra lean (99% lean) ground turkey breast
1/2 packet taco seasoning
1 can fat-free refried beans
1 can black beans, drained and rinsed
1 can diced tomatoes with green chilies
– Cook potatoes (bake, cook in Instant Pot, however you normally make them)
Cook ground turkey and add 1/4 cup water and the taco seasoning, mix well. Add refried beans together with the meat. Then add the black beans and diced tomatoes. Mix everything well.
Put tomatoes in the meal prep container and cut in half. Top the meat mixture on top and add whatever other toppings you choose. I ended up adding shredded cheese for my husband and feta for mine. I also added lettuce and reduced-fat sour cream.
