Quinoa Mango salad it’s easy, quick and delicious summer dish. High protein salad.

1 cucumber chopped
1 cup tomatoes chopped
1 bell pepper chopped
1/2 to 1 red onion chopped
1 mango chopped
1 1/2 green peas i used frozen (cook for 2 min )
1 cup dry Quinoa (cook according to the instructions)

Dressings
5 tbsp olive oil
4 tbsp water
2 lime juiced or 1 lemon
2- 3 garlic cloves
1 cup of cilantro
Cayenne pepper to taste
Sea salt to taste 1 tsp or more.
