Today I will be sharing with you a Vegan Egg McMuffin that is WFPB plus I will be sharing my favorite supplements. My Egg McMuffin will be using my mung bean egg recipe. The recipes and links for everything I talked about in this video will be in the description box below.

Cheese sauce recipe
1 Yukon gold potato
1 carrot
1 to 1 1/2 cups cauliflower
1 tsp each salt, onion powder, garlic powder
1 T lemon juice
4 to 5 T nutritional yeast
1/4 cup soy milk or any unsweetened plant milk
1 to 1 1/2 cup cooking water
Chop potato, carrot and cauliflower
Add to a pot of water, bring to boil and simmer for 15 minutes or until fork tender.
Scoop out the veggies and add to a blender, retain the cooking water in case you need more water to thin sauce..
Add the rest of the ingredients and blend well pour into a glass jar and let cool and store in the fridge for 7 to 10 days.
EGG MCMUFFIN
English muffins or gluten free bread toasted
Preheat a non stick skillet on medium heat and place 2 to 3 egg rings into pan.
Add about 1/2 cup of the egg mixture into each egg ring. Turn heat down to low and cover and cook until the top starts to look dry. Remove the egg ring and flip egg over, and cook for another minute than turn heat off, cover and let egg sit for a couple of minutes.
To Assemble
Spread cheese sauce to each side of the bread then add one of the eggs to the bread and add sauce to the egg and then top with the other piece. You can add steamed or fresh spinach as well. Be creative.
