A super delicious, easy and healthy meal! Lots of fiber, good fats, good carbs and protein from beans.
Ingredients:
Pickled veggies:
1 cup jicama, chopped
1 cup chopped or sliced onions
1 jalapeño, seeded and sliced
Pickling mix: 1 cup water, 1/2 cup vinegar, 1 tbsp sweetener (I used monkfruit), 1/2 tsp salt
The rest:
2 cups of chopped kale, massaged with some lime juice and a pinch of salt
2 cups chopped romaine lettuce
1 cup chopped tomatoes
1 15 oz can of cooked black beans
1 cup cooked corn (I used frozen corn that I thawed in a saucepan over low heat)
1 cup chopped or shredded cabbage (red or green)
1 avocado, chopped or sliced
Some lime juice, chopped cilantro and chili powder for garnish
Almond Chipotle dressing:
1/2 cup raw almonds
1 chipotle pepper in adobo sauce (from a jar or a can, or any hot sauce, or add one jalapeño)
Juice of 1 lime
2 tablespoons nutritional yeast
1 garlic clove
1 tbsp liquid aminos
3/4 cup water
