Kale Arugula Salad with Walnuts and Feta
Ingredients:
Half a bunch kale, chopped very fine
1/3 cup vinegar, for massaging the kale
1-2 tbsp salt, for massaging the kale and red onions
2 cups arugula, chopped roughly
1/4 medium red onion, sliced thin
4-5 green onions, sliced thin
1/2 cup chopped walnuts
1/2 cup feta, crumbled
2 small tomatoes, chopped small
5-6 tbsp olive oil
Juice of half a lemon (can be adjusted to taste)
Directions:
Combine vinegar, salt and kale in a large bowl and massage for about 1 minute until it wilts and decreases in volume. Set aside. Massage the red onions with some salt and set aside. Combine rest of the ingredients in a bowl. Rinse kale and red onions and squeeze out the excess water and place them with rest of the ingredients. Add the lemon juice and olive oil and mix very well.
