Chicken Fiesta Bowl Ingredients:
1 can corn
1 can pinto beans
1 can black beans
1 can petite diced tomatoes
1.5 cups white or brown rice
taco seasoning to taste
shredded chicken (about 3 breasts)
top with cheese to taste
top with sour cream to taste
Directions:
1. Cook rice (follow instructions on packaging). This can be done in advance.
2. Coat chicken in taco seasoning.
3. Cook and shred chicken. After shredding, let the chicken marinate for a bit in its juices.
4. While chicken is cooking, drain the corn, pinto beans, and black beans.
5. In saucepan, warm the petite diced tomatoes over medium heat. Add rice, corn, pinto beans, and black beans. Let this simmer until it thickens to a consistency you like.
6. Top with cheese (I suggest Mexican Blend) and/or sour cream
