Ingredients:
1. 2 cups of flattened rice (poha)
2. 2 medium-sized potatoes, peeled and diced
3. 1 onion, finely chopped
4. 2-3 green chilies, finely chopped
5. 1/2 teaspoon mustard seeds
6. 1/2 teaspoon cumin seeds
7. A pinch of asafoetida (hing)
8. 8-10 curry leaves
9. 1/4 cup roasted peanuts
10. 2 tablespoons oil
11. 1/2 teaspoon turmeric powder
12. Salt to taste
13. Fresh coriander leaves for garnish
14. Lemon wedges (optional)
Instructions:
1. Start by washing the poha under running water for a minute. Drain it well and set it aside to soften.
2. Heat oil in a pan or kadai over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
3. Add the asafoetida, green chilies, and curry leaves. Sauté for a minute.
4. Add the diced potatoes and cook until they become golden brown and crispy. This may take around 8-10 minutes.
5. Once the potatoes are cooked, add chopped onions and sauté until they turn translucent.
6. Now, add turmeric powder and salt. Mix well.
7. Add the softened poha to the pan and gently toss everything together. Be careful not to break the poha.
8. Cook for another 5-7 minutes on low heat, stirring occasionally until everything is well combined.
9. Add the roasted peanuts and mix them into the poha.
10. Garnish with fresh coriander leaves and serve hot. You can also squeeze some lemon juice over it for extra flavor.
