• Red potatoes
• Beets
• Large carrots
• Parsnip
• Red onion
• Garlic cloves
• Extra virgin olive oil
• Fresh thyme leaves
• Rosemary sprigs
• Ground cumin
• Kosher salt
• Black pepper

𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬:

* Preheat oven to 400°F, and chop vegetables into 1½-inch chunks.
* Combine vegetables, garlic, olive oil, thyme, cumin, salt, and pepper to taste in a rimmed pan; spread rosemary on top.
