Ingredients
: 2 tbsp oil for preparing masala + 2 tbsp oil for making the cooking brinjals
: 1 small sized onion chopped lengthwise
: 1 medium sized potato with skin peeled off and cut into cubes
: 1/2 cup powdered coconut or 1 cup freshly grated coconut
: 1 tsp goda masala (or any other garam masala if you do not have goda masala)
: 1/2 inch diameter tamarind ball
: Water as needed for grinding + water as needed to adjust the consistency of the gravy
: 6 eggplants or brinjals
: 1 tsp mustard seeds
: 1/4th tsp hing or asafoetida
: 1 tsp red chili powder
: 11/2 tbsp powdered jaggery
: 2 tbsp roughly chopped roasted groundnuts

Steps
: First prepare the gravy masala by heating up a kadhai to a high flame. Once the kadhai is hot, add 2 tbsp oil and once heated, add chopped onions along with chopped potatoes and let it cook until potatoes are soft (or cooked completely).
:Then add coconut and roast until you get the aroma of coconut and the color of the coconut changes to golden brown which takes around 3 mins.
:Once coconut is roasted, add goda masala and roast for another minute or two before turning off the flame.
:Grind this mixture in a mixer by adding tamarind ball until you get a smooth gravy.
:Now slit the brinjals as shown in the video and stuff this gravy into it.
:Heat up a kadhai to a high flame and add oil. Once the oil is hot, lower to a medium flame and add mustard seeds, hing or asafoetida and arrange the stuffed brinjals onto the kadhai. Remember to sprinkle some salt on the brinjals to prevent the brinjals from tasting bland.
: Then add the prepared gravy and let it cook for around 8-10 mins until the brinjals are soft and nicely cooked.
: Add red chili powder and salt and give it a good mix but be careful. The brinjals might break while mixing.
Add jaggery and mix again. If you feel the consistency of the gravy is too thick, add water as needed to adjust the consistency of the gravy accordingly.
: At last add coarsely chopped roasted peanuts, mix the gravy and turn off the flame. Bharli vangi is ready to be served.
