Tenderhearted Tofu Patty

Crafted with love for those steering clear of sweets, especially my sugar-resistant hubby, this recipe emerged from the desire to spoil without sugar overload. His ability to quit sugar effortlessly amazes me, and in those moments, celebrating required a touch of ingenuity.

I relish pampering him while mindful of boundaries, and this unique recipe perfectly encapsulates that sentiment. Whether it’s Valentine’s Day or any other occasion, these delectable patties are a delightful treat. Soft and creamy, they effortlessly melt in your mouth.

Ingredients:
250g plain Tofu (homemade or store-bought)
1 small roasted Beetroot
1/2 finely chopped Onions
1 tbsp. Salt
1/2 cup Rice Flour
Oil for frying (vegetable or olive oil)

Instructions:
– In a food processor, blend all ingredients until a dough-like consistency is achieved. Adjust with an extra tablespoon of rice flour if the mixture is too wet.
– Take a small amount of dough, shape it into a disc, and cut it into a heart shape using a knife or a heart-shaped cookie cutter.
– Repeat the process to create patties from the remaining dough.
-Pan-fry the patties and serve with cashew-based mayo.
– Prepare these patties in advance and store them in an airtight container in the fridge for up to 5-6 days.

Cashew Mayo:
Blend a handful of cashews with a tablespoon of vinegar, 1 tbsp of powdered mustard seeds, 1 tbsp of lemon juice, a generous pinch of turmeric, salt to taste, and some water to create a thick mayo.
