Meal prepping 5 healthy lunches on an $18 budget 😋
I shopped for my ingredients at Trader Joe’s. The all natural chicken thigh packet with 6 thighs and slightly under 2 lbs was $7.46. The organic white basmati rice was $4.49. The organic frozen broccoli florets were $2.29. The 3lb bag of organic sweet potatoes was $3.99. The total was $18.23 what a bargain for 5 healthy lunches.
Rice: Cook rice for 20 minutes. Bring 3 cups of water to a boil (for firmer rice and 4 cups for softer rice) then add 2tbsp of butter and 1/2 teaspoon of salt. Once you add everything and mix it put the lid on and turn it to low.
Sweet potatoes: Add about 1 tablespoon of coconut oil to a pan and leave it on low while cutting the sweet potato. Cut the 6 small sweet potatoes into smaller pieces about the size of 1/2 a finger. Then take pan and sauté it on medium heat 2 minutes on each side or until browned. Next add 1/4 of water and cover with lid and cook for 5 minutes or until tender and done.
6 boneless and skinless chicken thighs. Turn the pan on medium heat to warm up then spice the chicken with 1/2 teaspoon salt, 1/2 teaspoon season all salt, and 1/2 teaspoon of salt less seasoning. Cook for about 20 minutes flipping the chicks over every 5 minutes and leave the lid on. The last 5 minutes cook without lid.
Broccoli Florets: rinse the broccoli and strain it. Put it in a baking dish lined with parchment paper. Add about 1tablespoon of butter thinly sliced and spread it all over. Then add salt to taste and bake for 15 minute on 350 degrees.
