Ingredients:
3-4 ripe bananas, mashed
1/3 cup butter, melted
3/4 cup coconut sugar
1 farm fresh egg
1 teaspoon vanilla
1 teaspoon ground cinnamon
1 teaspoon baking soda
3 1/2 teaspoons baking powder
1/8 teaspoon salt
1 1/2 cup organic all purpose flour
1 cup walnuts, chopped
Instructions:
1) Preheat oven to 350 degrees. Lightly grease and flour a loaf pan.
2) In a large bowl, combine the banana, butter, sugar, egg, and vanilla. Stir well with a wooden spoon.
3) Sprinkle the cinnamon, baking soda, baking powder, and salt over the banana mixture. Stir to combine.
4) Add flour and walnuts. Stir just until flour is combined. Pour the batter in prepared pan.
5) Bake for 50-60 minutes until toothpick inserted in center comes out clean. Cool 10 minutes in pan, then turn out onto a rack and cool completely. Enjoy!
