Vegan Banana Nut Bread (Egg-less) Recipe
The original, unmodified banana nut bread recipe, has been in the family for years. I decided it was time to make a Vegan version so in short, you’re welcome. It tastes exactly like the original recipe but doesn’t include eggs.
INGREDIENTS
– 2 cups flour
– 1 1/2 tsp. baking powder
– 1/2 tsp. baking soda
– 1/4 tsp. salt
– 1/4 tsp. cinnamon
– 1/4 to 1/2 cups chopped nuts (pecans or walnuts)
– 1/8 tsp. nutmeg
– 2 egg replacers
– 1 cup sugar (vegan options below)
– 1/2 cups oil (I used olive)
– 5 ripe bananas
DIRECTIONS
1 – Preheat oven to 350 degrees.
2 – Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
3 – In separate bowl, mash bananas until slightly lumpy and add egg replacer (with required water), sugar, oil and stir well.
4 – Add liquid mixture to dry mixture and stir.
5 – Fold in chopped nuts.
6 – Spray bread pan with cooking spray and add batter.
7 – Bake for about 75 minutes (total) and cover with tin foil for the last 20 minutes.
8 – Let cool in pan for approximately 30 minutes before serving.
