5 minute breakfast tortilla ✨🌺
This is SO easy and tastes so good. It’s a nice way to shake up your regular breakfast options. Plus you can customise it using whatever veggies/toppings you have in the fridge.

Ingredients:
-1 large tortilla
-2 eggs
-1/2 tbsp olive oil
Filling options:
-bell pepper
-tomato
– spring onion
Toppings Options:
-shredded cheese
-feta cheese
-hot sauce
-avocado
-salt and pepper
1. Start by cracking two eggs in a small bowl and whisking them until they are well combined. Heat some oil in a skillet on medium heat.
2. Chop your veggies and add them to the skillet. Cook them for 2-3 minutes. Pour in your whisked eggs and make sure they are evenly spread to cover the bottom of the skillet. Place a tortilla on top and press it down to stick. Let it cook for 1 minute.
3. It’s time to flip it! You can either take it off the heat and use a plate to flip it or use a spatula. Once you flip it, add your favorite toppings such as cheese, avocado, and hot sauce. Fold in half once or twice and grill each side. Enjoy!!
