One of my all-time favorite recipes! This is super quick and easy to make, I love the variety of fresh veggies in this dish.

Ingredients:
Fish filet (I use tilapia)
salt
chili powder

1 cup coarse bulgur
2 Bell peppers
3 small cucumbers or 1 large
1 bundle each of dill and parsley
lemon, juice of half
1 tsp cumin
1/2 tsp black pepper
salt

Recipe:
1. Place the bulgur in a large container with 1/2 teaspoon salt and 1-1/4 cups boiling water. Place lid on container and let sit for 25-30 minutes, or until all of the water is absorbed.
2. Preheat oven to 350°
3. Place fish on a baking sheet and season both sides with salt and chili powder.
4. Cook fish for 15-18 min, flipping halfway through.

5. Dice bell peppers and cucumbers and place in a large bowl.
6. Finely chop the dill and parsley and add to the bowl.
7. Combine the cooked bulgur with all the chopped veggies and season to taste with salt, lemon juice, cumin, and black pepper. Stir.
8. Plate the fish and add a serving of the bulgur salad. Enjoy!
