I made this video to share how to cook Igado, my own version.

INGREDIENTS:

1) 300gm Pork Shoulder (cut into strip)
2) 300gm Pork Liver (cut into strip)
3) 1 can of Green Peas
4) 1 Green Capsicum
5) Garlic
6) Onions
7) 3 pcs Bay Leaves

SEASONING:

1) Pepper
2) Salt
3) 1 tablespoon of sugar
4) 1 tablespoon of white vinegar
5) 1 tablespoon of soy sauce

COOKING INSTRUCTION

1) Saute’ the garlic & onions. Add in pork meat, saute’ for 5 minutes.
2) Add 1 tablespoon of soy sauce and white vinegar. Saute’ for 5 minutes then add
2 cups of water (adjust if needed). Cover and simmer for 10 minutes.
3) Add in pork liver and bay leaves. Cover and simmer again until the liver is cooked.
4) Put seasoning, pepper, salt & 1 tablespoon of sugar.
5) Add in green peas, simmer for 5 minutes. Then, put in the green capsicum.
6) Ready to serve.
7) Enjoy
