[Recipe] How about a treat to satisfy your sweet tooth using healthier ingredients like sweet potato? This delicious dessert is filling enough in my opinion and can therefore make a satiating breakfast too!
For a more nutritious or lower calorie version of this dessert, I will recommend using low GI sugar / sweetener whenever possible.
Ingredients (1 to 2 pax)
1 sweet potato (240g)
1/2 to 1 tbsp sugar (I used monk fruit sugar)
1 tsp milk (optional, adjust based on the your preference)
Shredded cheese (enough to cover the whole surface)
1) Steam sweet potato cubes till fully softened (a chopstick or fork can poke through easily). Should take around 10 minutes after the water boils. Remove / drain any water released from the sweet potato after steaming.
2) Add sugar of your preference and mash it into the sweet potato. Amount of sugar given above is a guide and you can adjust based on your preference.
Add milk. This step is optional and the amount of milk is based on how moist you want the sweet potato texture to be.
3) Spread the mashed sweet potato into a bakeware and top with shredded cheese.
4) Air fried at 165°C for 8 minutes or till the cheese is brown.
